Sesame Corn Oat Waffle Mix
Ingredients: Rolled oats, cornmeal (organic), hulled sesame seeds, and barley malt powder.
Instructions: Pour 4 cups of the waffle mix into a large mixing bowl. Stir in 4 cups of milk (soy, cashew, etc.) into the mix until well blended. Add 1/8 cup honey or 1/4 cup date sugar or sweetener of your choice, and 2 T vanilla. Mix well. It is important to let the mixture stand in the refrigerator for at least 3 hours or overnight for the best results. Add 1/2 to 1 cup of additional milk to thin the batter to the desired consistency. Oil your waffle iron before preheating. Spoon cold batter onto hot waffle iron and spread evenly. Bake until steaming stops or as directed according to the waffle iron manufacturer’s directions.
To prevent waffles from sticking, mix 1 T liquid lecithin with 1 T vegetable oil. Apply with basting brush to top and bottom of waffle iron. You may also want to sprinkle sesame seeds on bottom of waffle iron and the top of the batter before closing the waffle iron. The seeds will help prevent sticking and add a delicious flavor.
To make pancakes with this mix, just add a little more liquid to the batter.
